Makes 8

    These sosaties are also delicious when roasted over hot coals.

    1 kg (21/4 lb) leg of mutton, cubed


    3 medium onions, chopped

    5ml (1 tsp) crushed

    10ml (2tsp) crushed garlic

    2 bay leaves

    6 cloves

    10ml (2tsp) turmeric

    5 ml (1tsp) peppercorns

    5 allspice

    75ml (1/3 cup) masala

    10ml (2tsp) ground cumin

    10ml (2tsp) ground coriander

    50ml (4tbsp) brown sugar

    375ml brown vinegar

    10ml salt

    8 wooden skewers

    vegetable oil for frying

    Mix ingredients for marinade and allow meat to marinate for at least 4 hours, preferably overnight. Shake off excess marinade and onion from meat and thread meat onto wooden skewers. Fry for 10 minutes on all sides and keep warm. Simmer marinade and onions for 10 minutes. Serve sosaties on a bed of freshly-cooked Tastic rice with sauce from marinade spooned over.
